If the game freezes right after character selection, usually EVE voice causes the crash. As CrossOver doesn't support sound anyway, you can just deactivate EVE voice in the prefs.ini.
To do this go to your EVE folder in the bottle (for example via Manage Bottles->EVE bottle->Advanced->Open C: in Finder).
You can find the prefs.ini in the cache folder, open it and you should be able to edit the ini.
Look for 'voiceenabled', set it to '0' and save. Restart the game.
