To launch Word when a '.doc' file is received as an attachment, ClientSetup establishes a conduit between CrossOver and your email client. These connections are managed on the Associations tab, where there are a number of entries for MIME/file types along with their associated handlers.

Most of these associations will be setup automatically during installation. More information on file type asociations can be found in the next chapter.
