I'm not sure how well Quicktime will work as a plugin in either IE6 or IE7 with Crossover. To install it, you'd first install IE6 into a new bottle. Then, go to Crossover's Install Software menu, locate the Quicktime 7.5 installer underneath "Community Supported Applications", and then proceed to install Quicktime into the same bottle as Internet Explorer 6 (you'll be able to select the proper bottle in the "Select a bottle into which to install..." field). Then, launch IE6 and see if there is any quicktime plugin functionality.
To install Flash into the bottle with IE6, locate "Flash 9 ActiveX Control" in Crossover's Install Software menu (you'll find it in "Runtime Support Components"), and proceed to install it into the same bottle as Internet Explorer 6.
