I used the GOG.com version of the game in my tests and works fine for me.
Important! At the end of the installation the installer will give an error window and then it looks like it is stuck. Then do the folowing: Press "ctr + cmd + esc" then end the wineloader proces and then the installation will end the shortcuts will be created normally. The game will work fine afterwards.

You could just add the /nogui option for the installer in the crosstie Paul, no need for anything else. The installer won't look so fancy but at least it won't bomb out.
