As an update to this, it appears that for whatever crazy reason Crossover did not recognize my ATi driver (12.4) at that time. More specifically, it kept throwing openGL errors as if it did not recognize that it was working. In fact it was fully functional as per glxinfo and glxgears both ran fine. I went ahead and installed the latest and greatest driver from ATi (12.10) for my 6700 card and low and behold, it now runs fairly well. I cant run it on Ultra settings as I can in Win7 (dual boot, same computer) where it runs flawlessly with all display settings set to maximum. Still, I can run it with almost all the settings on max (not all) and it runs fine.

The second issue I have with it now is that when I run it it always blanks the display on my 2nd monitor and it does not recover that display on exit, as it does on Win7.

Regarding the screen blanking see if following the advice on this page helps:

After modifying your xorg.conf you need to restart the X server. On recent Ubuntu installs (since 12.04 and 12.10) this can be done by dropping to a console via ctrl+alt+1 (first tty), logging in and then typing sudo service lightdm restart. The other, less elegant, way is a reboot.
