To blow away and re-create your exchange account without deleting/re-installing Outlook, itself, go to Crossover's Manage Bottles tool. Select the bottle containing Office 2007, and proceed to Control Panel>Mail.
Go to "Data files", and use "add" to create a new, backup data file. Then, click on the "email" tab, delete the existing account, and use "new" to create a new Exchange account. With the new account created, launch Outlook to sync with your Exchange server and re-populate your Mailbox.
