CrossOver Plugin supports QuickTime 5 and QuickTime 6. By default it will automatically install the latest supported version available. If you wish to install an older version, make sure you get the corresponding standalone installer from Apple. For instance you can get the QuickTime 5 standalone installer from the following URL:

However note that QuickTime 6.4 and greater is not supported yet.
