As far as I've been able to tell there's no overall reduction in speed once your applications have been launched GNOME 3, though I think the launching process itself takes a bit longer.
This is entirely anecdotal - I switched over to Unity with Ubuntu 11.10 a little while ago so I can't benchmark, but previously I was using Fedora 15 with GNOME 3.
I have been running it on Fedora 15 & 16 with no real issues that I know of.
With F16, I think CD support may be a bit quirky as Red Hat is killing support for HAL and Codeweavers still is using it for device detection, but since I rarely install with discs anymore, I can't say I will ever be able to tell :D Steam, MMOs, Desura have all negated the need for physical media.
I suppose if I can get around to it, I can try doing a framerate test somehow between GNOME 3.2 and KDE 4.whatever I have. But to be honest, GNOME3 feels lighter than GNOME2 and KDE4.
