I'd like to prevent a bottle from accessing the internet. Is there a way to do that? I just purchased crossover a few weeks ago, so it should be the newest version. Thanks!

Don't think there is a way to block just a bottle you can block the software or all of crossover using iptables (the firewall in Ubuntu) or maybe apparmor if your worried about software updates to that program you should be able to shut that off in the software.
