Is it possible to block the internet on the bottles so that the programs it contains can not be connected?

You could probably go into the "Internet Settings" on the Crossover control panel for the bottle, click on the "Connections" tab and then click the box for proxy server and set it up with an invalid proxy server address like 127.0.0.1.
I believe the proxy settings set in Windows (which are set by this feature) function much like in Linux: that it is up to the application to use them or look for them. Another possibility would be leveraging iptables to block certain programs from access the Internet using the owner iptables module, and running crossover as a different user.
