Yes, absolutely.
But note that Wine 5 is not likely to go final for a few more weeks yet. The other hard problem is that the Catalina patch set is not in upstream Wine, so we have to merge those together, which is a lengthy and complex process. So we'll absolutely have CrossOver based on Wine 5.0, but it will be some time yet.
