I'm wondering how to manage the update process for installed apps? Specifically, something like Office 2010 getts many regular and important updates delivered via Microsoft Update. Does this kind of update mechanism exist.work under Crossover? If so how does one invoke it? If not, how does one manage the required regular updating for this sort of application?

Programs like Office aren't able to update themselves in Crossover. The update mechanism used requires several parts of the Window OS that don't exist yet in Crossover.
For things like Office service packs you'll find entries for them in the Crossover Install Software list. Select the service pack you want and then the existing Office bottle to install against and run the install.
