I'm wondering if there is a way to direct my mail attachments to open in mac:word rather than the installed Word 2003 on Codeweavers.
PDF's open in Preview, but I'm sure that is because there is no installed viewer on codeweavers.
If I delete Word from the bottle will I not be able to compose emails?

You should be able to right-click on a file and select the "Open with" preference, and then select your Office programs as preferred. The Mac should default to that selection for those file types from that point on unless you change it back.
