I have Crossover, Crossover Games and Darwine installed. Just thinking of the wine config files, do they all share the same one?

No. They all store their files in different locations.
By default Darwine will use /Users/username/.wine/
Crossover and Crossover Games use /Users/username/Library/Application Support/Crossover/ and /Users/username/Library/Application Support/Crossover Games/
