There's a trick that will let you change the icon of any app on your Mac. It's all done through the Get Info window.
Get Info on the jpg image file you want to use. Select the icon in the Get Info window and copy. Then Get Info on the app icon Crossover created for your program (they're stored in your home folder/Applications/CrossOver). Select its generic/incorrect icon in the Get Info window and paste. That should paste the icon from the jpg file and replace the app's icon. I think you can also open the jpg, copy that, and paste that over the app's icon in Get Info but the scaling might look weird.
