I never had this issue in Linux, or MacOS prior to Catalina because I would just use PlayonMac, or PlayonLinux to install Wine-Staging and there is an option to hide the wine version from the running application. But having updated to Big Sur now it looks like Crossover is the only way to go for now.
I tried adding the registry entry manually but it didn't seem to do anything. I added a new key under;
If you haven’t done so already open a support ticket providing the games CrossOver entry if it exits and link to the Winehq bugzilla for the game that hopefully also links to the staged sha.
I’ve found the more information you provide CodeWeavers the quicker a bug get resolved, this includes running regression tests on upstream wine if your able to do this.
